TOMATO PACHADI
This tangy and spicy dish goes with chapathi, dosa and idly. Its easy to make and and can be done in minutes.
INGREDIENTS :
Onion : 1 (big)
Tomato : 5 (medium)
Green chilli : 2
Chilli powder : 1 tsp
Turmeric powder : 1/2 tsp
Garlic pods : 5 (crushed)
Fresh coriander leaves : to garnish
Salt : to taste
TO TEMPER :
Oil : 1 tbsp
Mustard seeds : 1 tsp
Fennel seeds : 1 tsp
Cinnamon : 1 small piece
Curry leaf : few

METHOD :
- Heat oil in a pan and add the given temper ingredients.
- Add the green chillies and garlic. Fry for few seconds.
- Now add the chopped onions and sauté until golden brown.
- Add the chopped tomatoes and fry until its completely smashed.
- Now add the given spice powders, salt and add enough water (I added almost 1/2 a cup). Mix well.
- Simmer the flame and close with a lid. Let it cook until it gets a dry masala consistency.
- Garnish with coriander leaves and serve hot.
NOTE :
- You can add salt right after adding tomatoes so that it gets cooked quickly.
- You can adjust the water level if you want it a little watery.
